Soybean Soufflé

6 – 8 servings

This soybean soufflé is light and fluffy and relatively easy to make. Enjoy it together with potatoes, soy mayonnaise or a gravy, and a good salad.



200 g dry soybeans

5 dl water

3 tbsp olive oil

1 clove garlic

2 tsp pizza seasoning

1 – 1 ½ tsp salt


2 sliced tomatoes

Black olives

Rosemary to sprinkle on top

Grated cheese alternative, optional


Do this

Soak the soybeans in plenty of water for at least 12 hours. Set the oven to 200°C. Mix the soybeans, water and all the seasonings in a blender until a creamy consistency is reached. Pour the mix into an oiled oven-safe dish. Decorate it with the sliced tomatoes and black olives. Sprinkle over the rosemary. Bake it for 55 minutes. Sprinkle over the cheese alternative and bake for an additional 3-5 minutes, until the cheese alternative melts.
