Mexican Salad with Coriander Lime dressing
1 red pepper
1 green onion
1 small can of corn
1 can of black beans
1 ½ dl olive oil
juice of one lime
1 garlic clove, crushed
2 large handfuls fresh coriander leaves
½ tsk cumin
½ tsk salt
Drain and rinse the beans and corn. Chop the red pepper and green onion. Combine.
Using a blender or hand mixer mix the olive oil, lime juice, garlic, coriander, cumin and salt to a dressing.
Pour over beans and vegetables and serve.
